The SANCERRE RED WINE AOC 2017 comes exclusively from the Pinot Noir variety cultivated on a 1.40 hectares area on chalky clay soils. This vintage obtained the "TERRA VITIS" certification.
After destemming, the grapes are put in stainless still vats for maceration during about twenty days.
Two third of the harvest are aged in new oak casks in which they made their malo lactic fermentation. Then they are fined with gelatin before being filtered.
The bottling is done twelve months following the harvest.
Appearance: A shiny cherry red coloured with a heavy appearance, pure and intense.
First Nose: Fines aromas of black fruits (blueberries) with a smooth hint of vanilla and cedar.
Upon aeration: The wine opens up with related aromas of black cherry, cocoa, blond tobacco and clove heart.
Gourmet nose, beautiful ripening.
Palate: Full bodied attack, mellow and strong tannins, wooded and spicy hints.
Mid palate: Crunchy with savor of grillotes mash, plums and vanilla.
End of palate: A spicy finale (pepper, laurel) for a rich and generous wine with notes of violet.
It goes well with red meat, meat in sauce, game and all kinds of cheese.
It should be served between 12° and 15°C.
