The SANCERRE RED WINE AOC 2016 comes exclusively from the Pinot Noir variety cultivated on a 1.25 hectares area on chalky clay soils.
After destemming, the grapes are put in stainless still vats for maceration during about twenty days.
Two third of the harvest are aged in new oak casks in which they made their malo lactic fermentation. Then they are fined with gelatin before being filtered.
The bottling is done twelve months following the harvest.
Appearance: A very shiny pure cherry red appearance.
First Nose: Discrete grilled scents, with floral aromas of roses and peony blossoms. Young fermentive aromas on canvas.
Upon aeration a greedy and complex palette of red fruits (cherry grillote, blackcurrant) with a touch of spices, licorice and toasted bread.
Palate: A Full bodied attack reveals an excellent fruity (blackburry, raspberry) with an optimum ripeness and tannins present. Light austerity for the future.
Mid palate: The balance appears on a spicy persistence. Fragrance of cinnamon and pepper.
End of palate: Flavours of vanilla and black fruits, a little touch of tobacco in return.
A strong character. A gourmet and very sophisticated terroir Pinot Noir.
It goes well with red meat, meat in sauce, game and all kinds of cheese.
It should be served between 12° and 15°C.
