At the limit of the village, the cellar is a very functional space, with two beautiful stainless still wineries and thermo-regulated, and two cask cellars, air-conditioned.
Our cask cellar is replaced each 3 years, one third per year. We use casks of 600 liters: we can make all stages of vinification and maturation inside the cask, thanks to an adapted thermo-regulated system. By this way, we also search for obtaining elegant wines with a woody which opens and sublimates those (Sancerre Rouge and Sancerre Blanc Grande Cuvee) wine’s personalities.
We make ourself our bottling, all year long thanks to our bottling chain.
To keep the quality of our wines, we let them having a rest of one month between the bottling and the labelling.
